ANDERSON — Executive Chef Coley Miller wants visitors to Hoosier Park’s new restaurants to try his jambalaya and crab cakes, which are both tasty and tempting.
That’s not all they should eat, of course, but the Louisville-raised Miller prides himself on his culinary background, with influences ranging from Taiwan to New Orleans.
“The jambalaya and the crab cakes, I really use in a way I learned when I was 15 years old and the old guys taught me how to make it but I just brought it up a little bit,” said Miller.
Miller is in charge of food preparation for the Big Deli; the 200-seat Prime Harvest Buffet; Mambo Italiano for quick subs and pizzas; Homestretch Clubhouse, where patrons can view live racing; and Homestretch Steakhouse, located on the bottom two tiers of the Homestretch area.
The steakhouse was likened to Shula’s or Ruth’s Chris Steak House by Jim Brown, general manager of gaming.
“We have what we call the Big Deli,” Brown said. “That is not a snack bar. That is a deli. We want to be able to compete with the Shapiro’s and McAlister’s and the other delis that are around the Indianapolis area,” Brown said.
Coffee served on the casino floor — usually unheard of — will be Seattle’s Best, he said.
Also coming to the track are Terrace Cafe featuring Starbucks products and Johnny Rockets, a lively hamburger diner. Johnny Rockets is intended to bring families to the track though children cannot cross over to the casino.
“You got to take care of families,” said Rudy McMillan, director of food and beverage at Hoosier Park. “You want them to come to the race side.”
