Cupcakery opens in Mounds Mall

ANDERSON, Ind. — Jinny Hunt has always loved baking.

She was the go-to person for family and friends when it came to baking a cake for any special occasion from a wedding to a birthday.

But the Anderson woman never expected that she’d make a career out of crafting the tasty treats.

“Cupcakes are perfect,” Hunt said from the bistro table just outside her cupcakery at Mounds Mall’s food court. “And they are so popular right now and there is no other cupcake shop in Anderson.”

Not only is she excited about flexing her culinary and creative muscles with concocting a variety of specialty cupcakes, she is also looking forward to breathing new life into the mall.

There will be 12 standard flavor combinations on hand at all times and then 16 more specialty flavors that will rotate out with four different each week. Jinny’s Cupcake Corner will also have gluten-free and sugar-free cupcake flavors as well as three Hispanic cupcake flavors on hand each week that will also rotate out.

One of the bakers is married to a man from the Dominican Republic and she is excited to share her husband’s family recipes with customers giving them different options like tres leches and churro cupcakes.

Some of Hunt’s combinations include a lemon cupcake filled with lemon curd and topped with fluff icing, spice cake with cream cheese frosting, chocolate with almond frosting, cheesecake cupcakes and many other varieties. The bakery will also feature a “non-cupcake” dessert like a brownie parfait with raspberry icing.

Everything is made from scratch at the bakery, she said.

The location Jinny’s has moved into previously housed a cafe that was decorated with a “Tuscan castle” feel and is a perfect fit for Jinny’s Cupcake Corner, Hunt said. She and husband Jim had been eyeing the location for more than a year before finally stopping to find out about it. After praying about it, Hunt said she knew it was the right thing to do.

“We are just so excited about the opportunity,” she said. “And one of the things I’m most excited about will be our daily high tea. It is such a neat thing to offer the community.”

Having several cafe tables under an arbor built inside the mall, Hunt will have high tea from 3:30 to 5 p.m. every Monday through Friday offering sandwiches, tea and, of course, sweets like cupcakes. This will be the ideal activity for children’s parties, mothers and daughters or for a group of women, she said.

Another service Hunt hopes the bakery offers is cupcake parties. These parties would be ideal for children’s birthdays, weddings or other events. She would provide and set up unfrosted cupcakes in a variety of flavors, several flavors of icing and a number of decorating items such as sprinkles, allowing guests to create their own cupcakes. The food could be tailored to fit the theme or colors of the event, she said.

One of the bakers, Virginia McIntire, said Hunt’s passion for baking is clear. She said it has been fun to watch Hunt help develop and taste the flavor combinations as they were readying to open the bakery.

Hunt said she will also do full cakes and pies and cupcake orders, including weddings.

Her favorite cupcake — a bit of heaven on a spoon — is a vanilla cupcake with macadamia nut and caramel ganache filling and a thick buttercream frosting topped with a caramel drizzle.
